
Meal Prep Sunday:Crunchy & Fresh Rotisserie Chicken Salad

Ingredients
- 1 lb chicken breasts (or more if you want more!)
- 1/4 c diced apple
- 1/4 c diced celery
- 1/4 c chopped nuts of choice (I like pecans or walnuts)
- 1/4 c halved grapes
- @primalkitchenfoods avocado mayo to your liking
- 1/2 tsp celery seed
- 1/2 tsp paprika
- Salt & Pepper to taste
- Optional: dried cranberries, pistachios, green onion, pickles

For me, #mealplanning and Sundays go hand-in-hand. Does this mean I plan out all 3 meals for every day of the week? Heavens, no! But it does mean I make sure I’ve got some good dinner options on hand, and breakfast and lunch staples are replenished.
I have to say I get tired of the same ol same ol for lunch during the summer, so I try to change it up sometimes. Chicken salad is a great go to. You can throw in different things based on what you like. If you’re looking to the week ahead like I am, add this #glutenfreedairyfree version to your lunch rotation! Wrap it up in lettuce, eat it with your favorite crackers (my favorite are @rwgarciasnacks sweet potato crackers) or make a sandwich (try toasting @udisglutenfree millet chia bread). Make a big batch to eat throughout the week!
