Meal Prep Sunday:Crunchy & Fresh Rotisserie Chicken Salad



  • 1 lb chicken breasts (or more if you want more!)
  • 1/4 c diced apple
  • 1/4 c diced celery
  • 1/4 c chopped nuts of choice (I like pecans or walnuts)
  • 1/4 c halved grapes
  • @primalkitchenfoods avocado mayo to your liking
  • 1/2 tsp celery seed
  • 1/2 tsp paprika
  • Salt & Pepper to taste
  • Optional: dried cranberries, pistachios, green onion, pickles

Cooking Instructions

  1. Shred chicken and set aside
  2. Prep fruits and veggies, dice into small pieces
  3. Prep dressing and season to taste
  4. Mix it all together!

For me, #mealplanning and Sundays go hand-in-hand. Does this mean I plan out all 3 meals for every day of the week? Heavens, no! But it does mean I make sure I’ve got some good dinner options on hand, and breakfast and lunch staples are replenished.

I have to say I get tired of the same ol same ol for lunch during the summer, so I try to change it up sometimes. Chicken salad is a great go to. You can throw in different things based on what you like. If you’re looking to the week ahead like I am, add this #glutenfreedairyfree version to your lunch rotation! Wrap it up in lettuce, eat it with your favorite crackers (my favorite are @rwgarciasnacks sweet potato crackers) or make a sandwich (try toasting @udisglutenfree millet chia bread). Make a big batch to eat throughout the week!
